From LotR online we're gonna be making Fried Beetroot Sticks!! 
(As always you can find the cooking instructions and full ingredient list under the break-)

SO, “what goes into Fried Beetroot Sticks?” YOU MIGHT ASKSlices of sweet little beated root dipped into a batter with, watch out, special flavors too.
2 Beetroots
Corn flour
Salt 
Red Chilli Powder
Garlic Paste
Baking Soda
Water
Peanut oil
And we'll also be making some horseradish sour cream dip to go along with it;
Sour cream
Prepared horseradish
1 Green onion 
Few splashes of lemon juice
Salt to taste
Ground pepper to taste

Retains the inherit sweetness to beetroot
And similar to pickled beetroot the sweetness contrasts the spicey of the batter
(which i encourage you to amp up if youd like more spice)
The horseradish sourcream dip is to die for
Measure with your heart for that one, and save some green onion to top it with when you serve
This would pair very well with a lime italian soda or with shaved ice cones
Im always very anxious about deep-frying things, or working with oils at high temperatures, but i didnt run into any complications with this dish. Just make sure to keep best practices and safety precaution in mind, especially with a wok as it can tilt!
. If you dont have corn flour, you can substitute all-purpose flour . If you dont have peanut oil, look up oils with the same smokepoint to decide what else to use

The recipe stuck out to me, as i was assembling a list of foodstuffs from tolkiens work, for being such a "regular" named food. Also its worth 19 silver 69 copper in the LotR MMO and im immature.
I think the dip has the most room for improvement and tinkering. I've never made horseradish sourcream before, so more practiced tastebuds could perfect a simple thing like this. In the future id also like to try adding red pepper flakes along with the the powder and garlic paste, to give more visual variety and spice. I think cumin in the batter would be a nice midtone flavor too.
I give this recipe a solid 8/10 (with 1 being food that makes one physically sick and 10 being food that gives one a lust for life again.) for its relative simplicity and modularity with things you could add.
🐁 ORIGINAL RESIPPY TEXT BELOW 🐁
Beetroot Sticks Ingredients:
2 Beetroots
130 grams corn flour
1 tbsp salt 
1 tsp Red Chilli Powder
1 tsp Garlic Paste
1/4 tsp Baking Soda
178 grams Water
432 grams peanut oil
Horseradish Sour Cream Ingredients:
225 grams Sour cream
200 grams Prepared horseradish
1 whole green onion (green and white parts VERY finely chopped)
1 tspn lemon juice
Salt to taste
ground pepper to taste
Beetroot Method:
Peel all beetroots and cut them length-wise into  rectangles.
Combine flour, salt, chilli powder, garlic paste, baking soda, and water in a bowl.
Mix well into a smooth batter.
Heat peanut oil to medium in a wok and dip beet roots into batter. Deep fry until golden brown in color.
Stack beetroots on paper-towel lined plates to cool and dry as you go.
Serve with horseradish sour cream!
Dip Method:
Mix all ingredients
Cover and let stand at room temperature for 1 hour for the flavors to blend.

It can be so confusing remembering all the different properties of food. Flat out over whelming to be honest. So instead of having a long sheet with every food you cook with and 10 properties it could have, start with this. It'll be a rule of thumb to help remember some basics.
Elements
If a food is spicy or has a lot of energy/Passion, it likely has the element Fire. Black Tea, Chocolate, and Jalapenos are examples.
If a food is very light or fragrant, it likely had the element Air. Onions, Herbs, and whipped cream are examples.
If a food is juicy, runny, or comes from the ocean/lake, it likely has the element Water. Apples, Milk, and Fish are examples.
If a food doesn't fit into any of the previous categories, chances are it has the Element Earth since all food comes from the earth.
Properties
Any food that has been a backbone staple will have Prosperity properties. Rice, Wheat, Oats, Cabbage, Quinoa; anything that has allowed a people to prosper.
Foods that have spent a lot of time directly in the ground will have strong Grounding properties. Beets, Potatoes, Carrots, and other root vegetables. Additionally, foods that have been through a grounding process also tend to have good Grounding properties. Coffee and Ground Meat for example.
Spicy spices are good for banishing and protection. Black pepper, Cayenne, Chili Flakes, Gochujang ect. If you hate spicy food, stick with Salt and maybe Garlic/Onion powder.
There will be some exceptions and overlap. This is just to help if you're starting.

Triple Black Korean Fried Chicken and Waffles
On the back of Eugene Yang's (Of the Try Guys) failure to make fried chicken and waffles, I, as a fellow Korean, thought I would help a bit. by:
Making it super black
Improve the flavor
Make it Korean spicy
For reference how Eugene failed are in these categories:
He failed to realize that Silkie Chicken is more lean, thus he needs to marinade it and cook it for a shorter cooking time.
He used the wrong dipping method. Dry dip, then wet, then that's it.
He could have used rice to make it crispier
He could have made it more evil by making it completely black
He should have made the dipping sauce sweet and spicy.
To be clear he did a pretty good job. He used honey, and used Soy sauce in the place of salt. But I'd have considered a bulgogi marinade at that point for it.
Fried Chicken:
Ingredients
3 tbsp of honey
3 cloves of garlic
1 thumb of ginger
6 tbsp soy sauce
6 tbsp sesame seed oil
1 tbsp kochukaru, fine
1 tbsp ground white pepper
4 tbsp Black sesame seeds
2 tsp of charcoal powder
2 tbsp Corn starch
1/3 cup ground Black rice, made into a black flour
4 cup AP Flour
6 tbsp soju
2 eggs beaten
1 lb Silkie Chicken thighs and wings
kochujang
scallion
1 quart of canola oil for frying
Method:
Make Bulgogi Sauce
1 tbsp of honey
3 cloves of garlic
1 thumb of ginger
6 tbsp soy sauce
6 tbsp sesame seed oil
Mix the marinade. Put the chicken into a bowl. pour marinade over the chicken.
If you want an extra umami kick, then use guk kanjang, but keep in mind it's super umami and also super salty, so you might want to cut down the amount by a tbsp and add a little water.
Normally I would put in sesame seeds and green onions, but both will burn.
The food science reasoning on this is: A marinade makes the chicken more tender. And the oil should slow down and even out how the Black Chicken is cooked. Black chicken also cooks faster, being leaner meat, so this may help even out the cooking process.
The Breading:
Dry Ingredients
1 tbsp kochukaru, fine
1 tbsp ground white pepper
4 tbsp Black sesame seeds
2 tsp of charcoal powder
2 tbsp Corn starch
1/3 cup ground Black rice, made into a black flour
4 cup AP Flour
Wet ingredients
6 tbsp soju
2 egg beaten
1 cup buttermilk
Gochu dipping sauce
1 tbsp gochujang
3 tbsp soy sauce
1 clove garlic
1/2 thumb of ginger, peeled and ground.
1 scallion, diced
1 tbsp black sesame seeds
1 tbsp honey
Combine the wet ingredients separately from the dry ingredients
You're going to take the mairnated chicken and dredge it in the buttermilk mixture first, and then dredge it in the dry ingredients second.
Use an air fryer/fryer to cook the chicken until crispy. Again, be careful to not overcook the chicken. Silkie is leaner and takes less time.
Black Ink Noodle salad
As a side, black ink noodles in a sesame dipping sauce.
Try to undercook the noodle a tiny bit since the noodles will absorb the sauce.
Sesame dipping sauce:
1 tbsp Honey
3 tbsps soy sauce
1/4 cup rice vinegar (If you're being "more Eugene" you can use balsamic [black] or pomegranate vinegar [deep red] for the color effect for the same amount)
1 tbsp black sesame seeds
3tbsps sesame seed oil
Cook the noodles, and then mix together the dipping sauce. Put the dipping sauce to the side, serve it like soba.
Waffles
The idea is to up the whole "red waffle" is evil idea by making red fish with black spots that bleed red in the middle. Cue evil Eugene laugh.
1 sweet potato, medium, baked prior, and mashed into a paste. (Red fleshed would be better)
1 tbsp soju
1/2 cup rice flour (Not sweet rice flour. Don't mix them up).
1/2 cup AP Flour
1/4 cup Black Sesame seeds
1 tsp baking powder
3/4 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
5 tbsp red beet powder
1/2 cup buttermilk
2 eggs
Black sesame seeds (optional and to taste)
1 fish waffle maker
Sweet Adzuki paste (You can buy online or make it yourself fairly easily).
Combine well until there are no lumps the buttermilk and the beet root powder first. Beet root powder has a tendency to clump so make sure it dissolves.
Combine the dry ingredients first: The rice flour, the cinnamon, the baking powder, the AP flour, the rice flour, the sesame seeds, the salt, the nutmeg.
Then combine the wet ingredients, the buttermilk with the beet root powder, the eggs, and the buttermilk. Add the sweet potato in last.
Heat up your waffle maker. (Better if a fish waffle maker)
Slowly combine 1/3 of the dry ingredients to the wet ingredients. Combine together slowly. Then combine another 1/3 and then the last 1/3rd. When just combined, spray your waffle maker, and do a test waffle. Often the first one is a dud. Let that be.
Add half the amount of the waffle, let cook halfway, add adzuki paste, cook the other half of the waffle, let cook together.
Serve the waffles hot and crispy.
The theory is that when you serve this recipe, it should be crispy, but still have contrasting flavors, yet have colors that aren't neceearily recognizable. Does it break the majority of the Korean rules? Yes. I suppose if you want to make it more colorful you can add a mango salsa, but look... it looks like a dish Eugene would serve.

Menus, Oct. 23-30
Several people were open to seeing my menu planning, and it's something I enjoy doing well, so here we go!
Notes: My dishes can all be gluten free (they are, for us) by using gf pasta (we like Rummo brand gf noodles and Tinkyada are good too). Otherwise, we're pretty generally low carb and most things are from scratch, but typically pretty simple. Most of these rely on root vegetables or beans for their carbohydrates.
Feta tomato pasta and sausage --This was viral on Instagram a while back, and I decided to try it. Now my daughter requests it pretty often. I don't make it quite like the original--mostly, I add some zucchini, double the feta, and add a bunch of Italian seasoning. This link is pretty much the same thing. They add shallots, which does sound lovely but costs a bit extra. I cooked some sausage with the meal because I didn't want to load up on pasta, personally, as I'm still staying very low carb.
"Bowl of the Wife of Kit Carson"--modified caldo tlalpeño--Pity poor Maria Carson, whose indigenous name I can't even learn, now remembered by her husband's name. That aside, it's a family favorite. We make it with the entire can of chiles in adobo, but that's a family preference. The avocados are pretty much the vegetable in this one so uhh...have plenty. I make the rice separate, both because that way you can vary it depending on your spice tolerance and because that way the rice doesn't suck up all the soup for leftovers.
Roast whole chicken, roasted mixed root vegetables, and garlicky kale. I basted the chicken with avocado oil (expensive but healthy; feel free to sub cheaper vegetable oil), seasoned it with a Penzey's mix I like called Ozark Seasoning, and stuffed it with rosemary, onions, and garlic. The root vegetables can be whatever; mine were yellow beets (slightly less "earthy" tasting than red, which might be more appealing to some), rutabaga, and carrots. Salt, pepper, and garlic powder is enough, seasoning-wise. And the kale, I blanch and then saute with a LOT of garlic.
Garlic parmesan white beans, brussels sprouts, and Gujerati carrot salad. I've not made the beans yet; they'll be a new dish for us. Sound great, though, and I'm trying to learn more meatless dishes generally and bean dishes specifically. We like to halve or quarter our brussels sprouts, depending on size, steam them, and then eat them with sour cream. And the carrot salad is a longstanding family favorite, which I got from my well worn copy of Madhur Jaffrey's Indian Cooking. This is almost the same recipe, but I don't add cayenne, and I wouldn't use olive oil, since it has such a low smoke point. I'd use peanut or canola or something. It's not spicy or "exotic" tasting, and it's been well-received at potlucks.
Pot Roast. There's no point giving a recipe for this one; just pick one that looks good to you. Just include lots of good veggies. I like carrots, onions, potatoes, and parsnips. It's fun to add a bag of frozen pearl onions, and I like frozen peas put in at the very end of cooking.
Tuna salad. I eat it over lettuce, the others eat it as a sandwich. Dinner for a tired night. My tuna salad is made with well-drained chunk light (in water), finely diced celery, finely diced green salad olives, salt, pepper, and mayo to bind. My family really likes the olives so I go heavy and also use a little of the jar liquid as a salt stand-in.
Deviled eggs and raw veggies with hummus. Another phone-in meal, or it would be if I didn't find making deviled eggs such a hassle. We all love them, but I have some inexplicable personal antipathy for how long they take to make. ANYWAY, my deviled eggs are the bestest, and you will not think so if you eat yours southern-style with (shudder) "salad dressing" instead of mayo, or sweet relish. No, mine are made with salt, pepper, mayo, and lots of finely minced green salad olives, and topped with paprika, preferably sharp paprika.
Pork tenderloin, frozen corn, and stewed apples and quince. Aren't we just POSH? Jacob got me a quince to try at the farmer's market. It's uh...well pretty much I guess it's like a rock-hard and fairly tart apple, with the granular texture of an Asian pear. They're generally eaten cooked, which is why I decided to stew it mixed with apples. So I just sliced the apples and the quince up fine (just leave out the quince if you don't have it which you probably don't, and maybe add a dash of lemon juice instead), simmered them in a couple tablespoons of apple cider (or juice; we had cider), and threw in a teaspoon of pie seasoning, a fistful of dried cranberries (the recipe called for raisins) and very approximately a tablespoon of allulose syrup. Obviously you could just use sugar instead. I topped mine with pecans and it was so so good. Oh, and also the pork: Usually two tenderloins come in a pack of tenderloins, so I put a different seasoning on each just for fun. Various blends. Lemon pepper and Montreal Steak Seasoning are favorites, but tonight I opened an unlabeled container in the pantry and discovered that it was rosemary salt the bestie made and left here, so I mashed it up with some garlic and put that on one, and did bbq rub on the other. The frozen corn....is frozen corn. Except, you know, microwaved.

The (Real) Stardew Valley Farm Update 2024
I’m wrapping up my third year trying to grow everything from Stardew Valley in our yard, with substitutions as needed, preferably with Midwest USA native plants.
I’m continuing to battle the invasive plants (why won’t the honeysuckle and thistles stop?????), beg for truckloads of woodchips (Google decided our address isn’t real anymore), and deal with a body and brain that makes going outside impossible sometimes (the past two years have been rough medically). But despite all of that I still managed to make a ton of progress!
Here’s how things stand as of now. If you’re looking back at previous posts you might notice some differences, but that’s mainly because things I planted died (drought + medical crises don’t bode well for newly established plants). I’ve also added the additional crops from the new update.
2021
Amaranth - Native white amaranth
Grape - Native riverbank grapes (so many grapes). I’m hopefully going to successfully propagate some cuttings from the neighbor’s green cultivated variety

Mushrooms - I'm just gonna ignore varieties and try some plugs or similar
Peach - Vine peach. It’s a melon, and more doable than a tree
Mahogany Tree - I think I’ll resort to mahogany nasturtiums

Taro Root - I would have to plant it in pots
Snow Yam - Not actually a yam but maybe native sweet potato vine?
Qi Fruit - Very creepy, not sure what to do with this
Over halfway there! If anyone has suggestions for plants please let me know because I’m still stuck on a few and very open to alternatives.
In other news, I’m making Stardew Valley Fair displays with cross stitch patches for each of the items I’ve added that year. I’ll have to post pics of those at some point.

Pickled Burdock Root
I boiled the burdock root with turmeric powder in case it was there for flavor and used beets for color instead because fresh turmeric wasn't available around here.
Also used cooking sherry instead of sake for the same reason. They should be ready in 3-4 days

On February 6th 1685 Charles II the “merry monarch” died.
The following is an account of King Charles II death by his physician Charles Scarborough, it seems quite horrific, and given a choice I think I would prefer to have died the same way as his old man, with one swift chop of the axe!
When Charles II lay dying from a convulsion which attacked him while shaving, the medicos of that day left no stone unturned in helping him along to the Great Beyond. First, he was bled of a pint of blood. Then his shoulder was cut and eight ounces more of blood was extracted by cupping.
Then followed an emetic, a purgative and another purgative. Next, an enema in which they used antimony, sacred bitters, rock salt, mallow leaves, violet, beet root, camomile flowers, fennel seed, linseed, cinnamon, cardamom seed, saffron, cochineal and aloes. This enema was repeated. In two hours, another purgative was given.
The King’s scalp was then shaved, and a blister raised on it. They gave him next sneezing powder of hellebore root; they sought to strengthen his brain by giving him powder of cowslip flowers. Purgatives were frequently repeated. He was given drinks of barley water, licorice, sweet almonds, white wine, absinthe, anise seed, extracts of thistles, rue, mint and angelica. When these did not cure him, they gave him a poultice of burgundy pitch and pigeon dung, to be applied to his feet. More bleeding, more purging; they added melon seeds, manna, slippery elm, black cherry water, extracts of flower of lime, lily of the valley, peony, lavender and dissolved pearls. When these did not do the trick, they went at it with gentian root, nutmeg, quinine and cloves. When this failed, he was given forty drops of extract of human skull. Then they forced down his throat a rallying dose of herbs and animal extracts. Then some powdered bezoar stone.
Alas, after an ill fated night His Serene Majesty was so exhausted that all the physicians became despondent. And so, more active cordials, and finally pearl julep [a heart tonic] and ammonia, were forced down the royal patient’s throat. Then he died.
Charles II died aged fifty-five, he suffered an apoplectic fit while shaving. He died four days later but may well have survived without the medical intervention of the day. No shir!
